Introduce U.S. statutes, regulations, and court cases relating to food safety concerns so students are prepared to handle real-world situations involving food safety. Students will gain an understanding of where and how to locate laws relating to food safety; the relationship between a statute, a regulation, and a court decision; and who has the authority to interpret them. The course also provides an overview of the interaction among federal and state food safety laws, and the expanding role of international food standards.

Approximately three weeks before the first day of class at North Dakota State University, campus coordinator Karen Murie
will touch base with students via email. She will encourage students to look for an email the week before classes start that will include instructions for accessing courses at NDSU.
One week before NDSU classes begin, students will receive Karen's email which includes their ID number, user ID name and instructions for setting up their Blackboard account at NDSU.
Students may then set their own password and security questions, choose to forward emails to a different account, and activate their NDSU Live account.
Courses may not be visible to students until the first day of classes.
This course requires an exam proctor. Consult the campus coordinator at the teaching university for proctor guidelines.
